I have a project that when opened in one room / workstation, my AJA device shows YUV-10, but when opened on another workstation, shows YUV-8.

Causing a problem for the first room because when switching into trim mode, the mode changes to YUV-8 and outputs a green flash when changing modes.

Is this a local Avid setting that can be fixed so the project always opens as YUV-8 (or trim mode stays in YUV-10) ?

Do you have the same AJA drivers installed on both machines. Sorry if I'm stating the obvious, but this also serves to bump your post up in the queue. ;) Btw... which AJA Device are you using?
