Hi - I'm planning to pick up a non-qualified Lenovo Legion 7i laptop that I'm hoping will be able to run Media Composer 2019.12.
It won't be used for client work, so I'm not so concerned about the full stability that I'd expect from a qualified laptop, but I'd love to know if there are any known confllicts with the below system/components -- or if it should it theoretically work fine?

And would any of these upgrades be recommended for Media Composer?

The two upgrades I'd add would be boost to 32GB RAM and W10 PRO. CPU & GPU should be fine, 512SSD sufficient for boot/pgm/non-media drive

I just went through the same thing debating on video cards, you should be fine on the 2070S vs 2080S. Avid likes CPUs, Resolve likes GPUs.
